Easy Four Ingredient Arroz Con Pollo (Chicken and Rice)

  • 1 pound chicken breasts
  • 8 oz yellow rice
  • 3 cups chicken broth
  • 1 can mild flavored Rotel
  1. Cut the chicken breast into bite size chunks
  2. Heat a little butter or oil in a large pot or dutch oven
  3. Add Chicken chunks to the pot
  4. Season the chicken with Adobe or Salt and Pepper
  5. Cook chicken until no longer pink stirring frequently
  6. Add chicken broth and Rotel to the pot
  7. Bring to a boil
  8. Add the rice
  9. Bring back to a boil
  10. Reduce heat to simmer
  11. Cover the pot
  12. Allow to simmer for 20-30 minutes stirring occasionally
  13. Uncover, cool and serve
